What is alginate casing?
Alginate is a natural gel extracted from brown algae, used as an alternative casing to natural, collagen, or cellulose casings. It is applied directly during the sausage-forming process, where it solidifies instantly upon contact with a calcium chloride solution.
The result is a plant-based, flavorless, uniform coating that is completely free of animal-derived raw materials.
