Este paso es crucial para mantener la uniformidad del producto final.<\/p>\n\n\n\n<p>A continuaci\u00f3n, la mezcla de salchichas pasa por un grupo de extrusi\u00f3n donde se aplica el recubrimiento de alginato vegetal. El alginato es un material de origen vegetal que forma la tripa alrededor de la salchicha, proporcionando una alternativa a las tripas naturales o artificiales tradicionales. El recubrimiento de alginato se aplica uniformemente alrededor de la mezcla de salchichas a medida que se extruye.
